Cadenas de Valor Agroalimenticias en Territorios Urbano-Rurales de Mexico: Estudios de caso en las cadenas del chile, de la leche, del tequila y de la nuez

Abstract

A partir de informacion secundaria disponible y de entrevistas a todos los eslabones de las cadenas de valor de la leche, el tequila y la nuez, se caracterizan los sistemas de produccion alimentarios de tres territorios rurales-urbanos de Mexico, analizando el grado de exclusion/inclusion socioeconomica en cada eslabon y la contribucion de la cadena al crecimiento inclusivo. Se identificaron variantes locales (grandes explotaciones en Delicias-Meoqui y en Chihuahua, numerosos productores en Lagos de Moreno), la importancia de las cooperativas lacteas y la del Consejo Regulador del Tequila para mantener margenes de ganancias. El estudio resalta la importancia de la accesibilidad, calidad y oferta educativa local, y tambien la importancia de los vinculos entre academia y empresas de las cadenas de valor.
