Abstract

Cet ouvrage collectif est le premier état des lieux sur les dynamiques de circuits courts et de systèmes alimentaires territorialisés en France. Des praticiens de terrain décrivent les diverses modalités en oeuvre et les questions posées. Des chercheurs abordent des thématiques transversales qui permettent une meilleure compréhension des évolutions à l'oeuvre.
