La industria de lácteos en Valledupar: primera en la región Caribe

Abstract

Esta investigación tiene como objetivo realizar un diagnóstico de la cadena de lácteos en el Cesar. Se puntualizan las ventajas y oportunidades de esta actividad productiva en el departamento y el papel que este juega a nivel regional y nacional, haciendo énfasis en el eslabón primario (la producción de leche) y secundario (la industria de derivados lácteos) de la cadena. Además, se describe el comercio internacional de sus productos lácteos, identificando algunas debilidades del sector y los temas que merecen la atención de los hacedores de política. Se encontró que el Cesar ha sido uno de los departmentos más importantes del caribe en cuanto a la producción y acopio de leche cruda. Además, se destaca por su inventario bovino, por tener el mayor número de plantas de procesamiento que utilizan al menos 500 litros de leche diarios y porque su industria genera la mayor producción bruta, valor agregado y empleo en la región. Su importancia trasciende la costa caribe y podría llegar a convertirse en el primer productor y exportador de lácteos del país.
