Diseno de comida como fuente de innovación social

Abstract

El enfoque denominado, Diseno de Comida (Food Design), es una nueva perspectiva creativa por medio de la cual es posible obtener resultados en tres pilares específicos: i) Diseno de comida, centrado en la innovación de nuevos productos gastronómicos; ii) Diseno para la comida, centrado en la innovación de nuevos utensilios que mejoren la experiencia gastronómica, y iii) Diseno sobre la comida, centrado en el desarrollo de estrategias de marketing inspirados en el acervo cultural gastronómico de una comunidad. El presente artículo presenta los resultados de aplicar este enfoque creativo en dos productos gastronómicos de Narino (Colombia): el Cuy Asado y el Dulce de Mora Silvestre. Los prototipos muestran una serie de alternativas creativas para la diversificación de productos gastronómicos regionales. Así, en el diseno para la comida, se presenta un nuevo formato de postre para el Dulce de Mora, en el diseno con la comida se presenta una alternativa de presentación del Cuy Asado, y para el diseno sobre la comida se presenta una estrategia de comercialización que rompe el concepto tradicional del Cuy como ícono regional gastronómico. Se discute la importancia de identificar, promover y disenar nuevas experiencias alimentarias como herramienta de promoción cultural.
