Abstract

with some general theoretical notions we will refer the chemical composition of meat products and the admissibility of nitrates that meat products contained, and we will end with the presentation of the study results. The problems of toxicological order that refer to the meat products are studied in the present paper. The research was realized on meat products samples taken from three Workshops for meat products in Alba Iulia town and the nitrates value fluctuation registered in 139 examined samples was evaluated. Beginning with some general theoretical notions we will refer the chemical composition of meat products and the admissibility of nitrates that meat products contained, and we will end with the presentation of the study results.
