Abstract

Kedelai, sebagaimana dijelaskan oleh Rukmana dan Herdi (2014: 4) adalah tanaman pangan terpenting ketiga setelah padi dan jagung. Kedelai merupakan salah satu komoditas pertanian yang mempunyai prospek yang baik untuk diusahakan. Kebutuhan kacang kedelai dunia cenderung meningkat dari tahun ke tahun. Di Indonesia saja, berdasarkan proyeksi konsumsi kedelai tahun 2003-2025, pada tahun 2020 total konsumsi kacang kedelai diprediksi mencapai 3,03 juta ton atas dasar konsumsi perkapita 10,79 kg/tahun dengan proyeksi penduduk 280 juta jiwa dan pertumbuhan penduduk 1,16%. Bahkan pada tahun 2025 diperkirakan konsumsi kedelai di Indonesia mencapai 3,35 juta ton.Rukmana dan Yuyun (1996: 17) menjelaskan, bahwa dalam industripengolahan hasil pertanian, kedelai merupakan bahan baku pakan ternak, minyak nabati dan lain sebagainya. Bagian yang paling penting dari tanaman kedelai adalah bijinya. Biji kedelai dapat diolah menjadi berbagai produk olahan makanan, misalnya dibuat tahu, tempe, tauco, kecap dan susu sari kedelai serta aneka olahan lain yang berbahan baku kedelai sebagai sumber protein yang relatif murah
