Abstract

El objetivo de esta investigación es la identificación de los factores asociados a la compra de una papa de mayor calidad atendiendo a las percepciones que los consumidores poseen sobre las aptitudes culinarias de las variedades de papa, diferenciando a los mismos por niveles socio-demográficos y económicos.
