Abstract

(VF)Les différentes conséquences des modifications climatiques ont des aspects économiques sur la filière vitivinicole particulièrement complexes et extrêmement variables selon les régions et les vignobles à travers le monde. En Bourgogne, quatre cépages (aligoté, chardonnay, gamay, pinot noir essentiellement) aux réactions spécifiques sont particulièrement concernés. La difficulté de l’analyse (puis, de l’évaluation dans une étape ultérieure) tient à l’existence d’une multitude de situations spécifiques que l’on se propose de commencer à caractériser ici. La réflexion proposée n’est qu’une première approche, sans doute partielle, dont l'objectif est d'identifier (de déterminer, de reconnaître) les modifications apportées à la plante, à son traitement et à son environnement au cours des différents stades de son cycle de vie, sur une et/ou plusieurs années. Le problème est abordé sous l’angle des coûts de production, et c’est en s’appuyant sur la méthode d’évaluation des coûts par centres d’analyse, que l’étude va être menée. Après un panorama général de la place de la filière vitivinicole au sein des régions de production, le cas de la Bourgogne sera approfondi. Une brève présentation du principe d’évaluation des coûts sera suivie d’une description des situations susceptibles de se produire dans les décennies à venir.(VA)The different consequences of the climate change have economic aspects on the wine sector. These related aspects are particularly complex and extremely variable according to regions and vineyards throughout the World. In Burgundy, four grape varieties with specific reactions due to climate change (mainly, Aligoté, Chardonnay, Gamay, Pinot noir) are particularly concerned. This analysis problem, then in a next stage the one for the evaluation, is due to the existence of a large number of precise situations which we start to identify here. The suggested thought is only one first approach, undoubtedly partial, whose objective is to identify the changes made to the plant, its treatment and its environment (background) during various stages of its life cycle on one or over several years. The problem is tackled from production costs point of view, and the study will be undertaken with the method of the costs evaluated by centers of analysis. After a general overview of the wine sector within the areas of production, the case of Burgundy will be detailed. A short presentation of the costs method will be followed by a scenario concerning plausible situations for next decades.
