La nutrition dans les stratégies d’innovation alimentaire : de la protection du risque de santé publique à la construction de l’avantage concurrentiel

Abstract

La nutrition suscite un intérêt croissant chez les industriels de l'agroalimentaire. Chaque année, on assiste ainsi à des lancements de plus en plus nombreux de nouveaux produits présentant des bénéfices nutritionnels. Cependant, il est utile de rappeler que la nutrition n'est pas un champ d'innovation comme les autres. Face aux menaces et opportunités générées par « l'environnement nutritionnel », deux orientations stratégiques se dessinent. La première consiste à faire de l'innovation nutritionnelle un levier de différenciation. Dans la deuxième, l'innovation nutritionnelle a vocation à protéger l'entreprise du « risque de santé publique ». Pour chacune de ces orientations, un cadre d'analyse est proposé et illustré à partir de nombreux exemples. Nous formulons des recommandations managériales et soulevons des questions importantes pour l'avenir de l'innovation nutritionnelle.
