Abstract

Créé en 2014, le dispositif des Projets Alimentaires Territoriaux (PAT) propose un cadre territorialisé et multiacteurs visant à un développement plus durable des systèmes alimentaires. Devant l'apparente diversité des modalités de construction de ces PAT, nous faisons l'hypothèse que ces dernières peuvent révéler des tendances ou modalités-types, pouvant amener le système alimentaire des territoires sur différents chemins de transition. Dans un premier temps, nous mettons en évidence ces différents types de gouvernance des PAT, sur la base d'une enquête conduite auprès des structures porteuses de PAT en Occitanie. Dans un second temps, nous proposons une modélisation théorique des chemins de transition possibles des PAT selon ces modalités-types, par la mobilisation de différents cadres théoriques de l'économie institutionnelle et du développement.
