Abstract

In the context of an evolving demand for dairy products in Senegal, this article seeks to capture consumers' penchant for local milk, which is a key asset for local herders. Through a qualitative analysis, it shows that local milk can gain a major place in the industry, since consumers attribute particular value to the fact that industrial products, considered safe from a food safety point of view, are also a symbol of local identity.
