Abstract

Rarement etudiees pour elles-memes, les industries agroalimentaires ont souvent ete integrees dans les analyses economiques de l'agriculture ou de l'alimentation. Si on recherche les facteurs macroeconomiques du developpement de ces industries, les "theories de la regulation" constituent un cadre methodologique approprie. Il permet a la fois de mettre en evidence l'emergence et la crise d'un modele de developpement de type fordiste dans le secteur agroalimentaire et de situer ce modele dans l'evolution economique de la France depuis les annees 50.
