Abstract

Cet article étudie l'arbitrage entre les achats et l'autoconsommation de légumes à partir de l'Enquête sur la consommation alimentaire 1991 de l'INSEE. Le modèle décrit la disponibilité d'un jardin, la consommation et l'autoconsommation de légumes. Les auteurs utilisent des procédures en deux étapes qui permettent de distinguer la décision de consommation de celle portant sur le montant consommé. Les résultats montrent l'indépendance entre la consommation de légumes et l'autoconsommation. On obtient en outre d'intéressants effets socio-démographiques qui peuvent être différents selon que l'on étudie la fréquence ou le montant autoconsommé.
