Abstract

Les changements technologiques et structurels observés dans les industries alimentaires depuis une trentaine d'années sont le résultat d'un apprentissage technologique, qui est localisé dans les entreprises. L'accumulation des savoirs scientifiques et technologiques est un processus de long terme : trois périodes sont distinguées dans l'évolution de ces industries depuis la fin du 19e siècle. Il y a une hétérogénéité des apprentissages technologiques qui permet de distinguer cinq profils-types d'entreprise. Dans chacun d'eux, il y a en particulier des capacités différentes à utiliser les sources externes qui tiennent à l'organisation de l'apprentissage interne. Celui-ci détermine les formes d'interaction entre l'entreprise et l'environnement qui contribuent aux innovations.
