Abstract

Les évolutions de la consommation alimentaire sont lentes et doivent donc être analysées sur la longue période. Dans le cas du vin, on s'intéresse aux transformations des comportements individuels de consommation durant les 15 dernières années, observées au travers de quatre enquêtes ponctuelles réalisées à 5 ans d'intervalle. Pour interpréter la dynamique des mutations en cours se posent des problèmes méthodologiques liés à la prise en compte du temps sous ses diverses acceptions : temps chronologique (écoulé entre chaque enquête), temps biologique (âge des individus), temps biographique (cycle de vie des consommateurs), temps historique (effet de génération).
