International meat trade : adjusting domestic food markets ?

Abstract

Les échanges internationaux de viandes, avec environ 50 milliards de dollars/an (données FAO), sont actuellement l'un des tout premiers postes des échanges de produits agricoles. Ils ne représentent cependant que 10 % de la production mondiale de viandes. La quasi-totalité des pays participe à ces échanges comme importateurs et/ou exportateurs. Le marché mondial des viandes est-il pour autant "global" ? Quels rôles jouent les échanges extérieurs dans l'économie des divers systèmes productifs ? L'auteur aborde ces questions à partir d'une analyse de la nature des systèmes productifs fournissant de la viande et d'une rétrospective historique des échanges internationaux. Bien que les échanges extérieurs de viandes représentent, pour la plupart des pays, une petite proportion des volumes produits et consommés, il se pourrait qu'ils participent à une régulation, à l'échelle mondiale, des productions de céréales, d'oléo-protéagineux, de lait et de laine, ainsi qu'à une répartition des espaces ruraux entre surfaces labourées et surfaces pâturées.
