Abstract

L'artisanat alimentaire urbain occupe une place importante dans l'approvisionnement des villes africaines. Cela dit, la mise en marché de produits typiques reposant sur des savoirs contextualisés rencontre une suspicion de la part des consommateurs urbains. Des pratiques d'approvisionnement par des réseaux de proximité (achat au village, fidélisation en ville) permettent d'y pallier, de même que certaines formes d'organisation. En s'engageant vers des dispositifs civiques, les groupements féminins au Burkina Faso construisent un compromis qui rétablit la confiance.
