Abstract

Comment les intermédiaires transmettent-ils au consommateur les prix des attributs de la qualité des produits ? Cette question est examinée à partir de l'exemple du raisin de table, en considérant deux catégories d'intermédiaires : les grossistes traditionnels et la grande distribution. On met en évidence deux modes de transmission des prix, associés à des modalités distinctes de formation des marges. Ces résultats illustrent le positionnement de la grande distribution par rapport à la qualité en fruits et légumes : faible différenciation verticale et forte différenciation horizontale. Ils mettent également en évidence la disposition à payer limitée du consommateur pour le signe AOC.
