Abstract

L'article rassemble une série d'observations concernant le rôle de l'innovation par la demande dans les domaines qui concernent les services aux individus, dont l'alimentation. En prenant pour hypothèse que ceux-ci constituent le moteur d'un modèle de développement original dans une société globalisée, il propose quelques pistes de réflexion sur le mode de régulation et les crises de régulation d'un tel modèle et attire l'attention sur le rôle de l'opinion dans la formation des crises.
