Abstract

De 1985 à 1991, l'emploi dans l'industrie laitière de l'Ouest a été une des victimes de l'arrêt porté à l'essor de la production laitière et des restructurations industrielles. Les établissements de dimension moyenne et les fonctions de production ont plutôt été épargnés tandis que se poursuivait la mise en place de nouvelles formes d'organisation du travail permettant des gains de productivité.
