Le marché des algues alimentaires dans le monde en 1987. -Place d'Undaria Pinnatifida

Abstract

Si on exclut les algues servant a la production de phycocolloides, la consommation mondiale d'algues alimentaires s'eleve a un peu plus de 180 000 tonnes (equivalent poids sec). Cela représente 52 pour cent du tonnage de la récolte totale d'algues. Les consommateurs les plus importants sont les japonais (53 pour cent), les chinois (39 pour cent), les coréens (6 pour cent) et les taiwanais (2 pour cent). La consommation du monde occidental ne représente que 0,1 pour cent du total mondial: les Etats d'Amerique du Nord consomment 236 tonnes par an, les états europeens 100 tonnes dont 27 pour la France. Pour ce qui concerne Undaria pinnatifida, consommé sous forme de wakame, les quantités utilisées sont les suivantes : Japon 41000 tonnes par an, Corée 10000 tonnes, états d'Amerique du Nord 24 tonnes, états européens 10 tonnes dont 2,7 tonnes pour la France. En vue de préciser les modalités de création d'entreprises d'algoculture produisant Undaria pinnatifida les principaux acteurs sur les marchés nationaux et internationaux sont identifiés: producteurs, importateurs, distributeurs, consommateurs. Des projections de consommation à l'horizon 1992 ont été effectuées.
