Evaluation d’un nouveau produit alimentaire : le rôle de la congruence et du packaging

Abstract

L'objectif de cet article est de montrer l'influence simultanée de l'innovation produit (congruence de l'ingrédient associé) et de l'innovation packaging (type de contenant et quantité d'informations sur l'étiquette) lors du lancement d'une nouvelle boisson alcoolisée aromatisée (cidre cassis vs. caramel). Ces éléments sont testés par le biais d'une expérimentation invitant 383 individus à indiquer leurs croyances et préférences vis-à-vis du nouveau produit. Les résultats indiquent que le mélange le plus congruent (cassis) est mieux apprécié, que la forme du contenant (packaging) influence à la fois l'agrément perçu et les croyances gustatives vis-à-vis du produit. Enfin, la présence visuelle de l'ingrédient sur le packaging modifie l'intensité perçue du goût sucré lorsque le mélange est jugé congruent (cassis).
