Abstract

Dans ce chapitre les auteurs se sont efforces de réunir un maximum d'informations concernant les données économiques relatives a la production des protéines végétales nouvelles dans les principaux pays. Après avoir délimité le champ des protéines végétales et rappelé les caractéristiques essentielles des différents produits obtenus a partir de la transformation de la graine de soja, qu'ils soient en poudre ou textures, les auteurs ont retrace l'histoire des protéines végétales depuis leur apparition aux États-Unis en 1929 jusqu'à nos jours. Le marché américain est largement évoqué, étant celui sur lequel existe un grand nombre d'informations chiffrées et publiées. Vient ensuite le marché japonais, très spécifique, et caractérisé par la présence, à cote des protéines de soja, d'un marché important des dérivés du gluten de blé. Enfin, le marché de l'Europe de l'Ouest clôture ce rapide panorama: c'est un marché hétérogène du fait des habitudes alimentaires très différentes et du fait de l'absence de toute réglementation commune.
