Abstract

L'obligation d'être beaux pour nos produits alimentaires, en grande distribution, contribue fortement au gaspillage alimentaire actuel. Ces critères esthétiques écartent chaque année de la consommation plusieurs millions de tonnes de produits estimés « pas assez beaux », un gaspillage qui pourrait être évité ou à minima réduit. Une maîtrise de cette offre de produits non conformes aux standards de l'esthétisme peut réduire de manière considérable le gaspillage alimentaire. Pour autant, la proposition de ce type de produits alimentaires n'est pas évidente face aux exigences, parfois excessives, du marché et de la grande distribution (recherche du zéro défaut, cahiers des charges). Dans ce cadre, nos recherches s'intéressent à la perception par les consommateurs d'une nouvelle offre de fruits et légumes « moches », forts médiatisés ces dernières années. Les premiers résultats explorent les contradictions et les présupposés des consommateurs. Ils mettent aussi en évidence que la réduction du gaspillage alimentaire passe par la valorisation indispensable de ces produits délaissés.
