Abstract

Une « bio-histoire » ( ?), avec des mutations décisives : transition démographique, urbanisation, révolution industrielle, alimentation plus abondante et variée, avec des horaires et des noms de repas qui changent, changement dans la perception et l'utilisation du temps (de nouveaux rythmes de vie) dans le cadre d'un société qui s'industrialise. Les pouvoirs publics et le législateur sont attentifs aux questions d'hygiène et de santé, surtout en Grande-Bretagne, en Allemagne et en France : y eut-il de véritables politiques de santé ?
