Cenário Atual Da Gestão Da Qualidade Na Cadeia Produtiva Da Carne Bovina: Estudo De Casos

Abstract

A obtenção de características da qualidade desejáveis pelo consumidor de carne bovina está ligada ao gerenciamento da qualidade desde as propriedades rurais de pecuária de corte, frigoríficos e supermercados ou açougues. As características da qualidade da carne bovina dependem dos procedimentos adequados desde os produtores até o preparo do produto no consumidor final. Além do mais, os procedimentos adequados de gestão da qualidade corroboram para menores perdas e desperdícios, resultando em um melhor desempenho do negócio. Desta forma, esse artigo tem como objetivo analisar a gestão da qualidade na cadeia produtiva de carne bovina no Escritório de Desenvolvimento Regional (EDR) de Tupã, mais especificamente pretende-se averiguar se pecuaristas e frigoríficos adotam procedimentos adequados que permitam a obtenção de características de qualidade aceitáveis para o consumo da carne bovina e melhoria no desempenho dos negócios. Desconexão com o mercado consumidor, práticas inadequadas de manejo nas propriedades rurais, falta de monitoramento da qualidade do produto no varejo, são alguns dos principais pontos críticos na cadeia produtiva da carne bovina.--------------------------------------------The attainment of desirable quality characteristics for the beef consumer is linked with quality management since the cattle farms, slaughterhouse and supermarkets or butcher. The quality characteristics of the beef depend on adjusted procedures since the beef producers until the preparation of the product for the final consumer. In addition, the adequate procedures of quality management corroborate for lower losses and wasteful, resulting in a better business performance. In this way, this paper aims to analyze the quality management in the beef supply chain in the “Escritório de Desenvolvimento Regional (EDR) de Tupã”, more specifically it aims to discover if cattle farm and slaughterhouse are adopting adequate procedures that allow to the attainment of acceptably quality characteristics for the beef consumption and improvement the business performance. Disconnection with final consumer, inadequate procedures in the farms, lack of quality control of the product in the retail, is any of the main critical points in the beef supply chain.
