Perfil do consumidor de hortaliças na região centro-oeste

Abstract

O presente estudo tem como objetivo a avaliação do comportamento de consumo de hortaliças no Centro-Oeste verificando o perfil dos consumidores. A revisão teórica discute mudanças nos hábitos alimentares que podem influir no posicionamento estratégico das empresas. O princípio de imitação-distinção, defendido por Bourdieu (1996), como um dos fatores determinantes da evolução dos hábitos alimentares pôde ser verificado. O estudo traz a evolução do consumo de hortaliças no Brasil a partir de séries históricas. Utilizou-se o método dedutivo de pesquisa, e a pesquisa documental e de campo (survey) como métodos de procedimento. O perfil encontrado para os consumidores de verduras acima da média é caracterizado por mulheres, com renda e escolaridade média e alta e possuem preocupações diestéticas. Também foi constatado que o princípio da imitação-distinção exerce influência sobre a evolução do comportamento de consumo alimentar. The goal of present study is the vegetable consumption behavior evaluation in the Center- West. The theoretical review discusses alimentary habits changes which can influence the strategic positioning of the companies. The principle of imitation-distinction, defended by Bourdieu (1996), as one of the determinative factors of the evolution of the alimentary habits could be verified. The study brings the historical series of vegetable consumption behavior evaluation in Brazil. The deductive method of research was used and the documentary research and survey were used as the procedure methods. The profile found for the vegetable consumers who are above the average is characterized by women with income and education degree that are medium and high and also have diestéticas concerning. Also it was evidenced that the principle of the imitation-distinction exerts influence on the evolution of the alimentary consumption behavior.
