Abstract

Zusammenfassung Die Studie hat zum Ziel, einen Überblick über den deutschen Markt für Honig zu geben. Es werden die Imkereistruktur und die Beziehungen zwischen den Marktpartnern dargestellt. Daneben werden die Versorgungsbilanz sowie die Nachfrage betrachtet, bei der Deutschland als einer der größten Konsumenten auch weltweit eine entscheidende Rolle spielt. Zu unterscheiden sind hierbei Honige, die via Direktvermarktung vom Imker vertrieben werden, und Honige aus dem Einzelhandel. Diese Segmente existieren in Deutschland parallel zueinander und ergänzen sich teilweise. Aufgrund dieser Marktsegmentierung bestehen unterschiedliche Preisstrukturen und -elastizitäten. Die Imkereistruktur zeichnet sich in Deutschland durch 95 Prozent Hobbyimker, mit einer begrenzten Anzahl an Bienenvölkern pro Imker und einer geringen Produktion aus. Die Basis der Studie bilden Experteninterviews sowie die Informationen, die im Rahmen der Imkereiprogramme der Bundesländer erhoben wurden.//////////Abstract The study shows the structure and the context of the honey market, as well as the beekeeping structure in Germany with the purpose of composing a basic understanding. In this connection it analyses the supply balance as well as the demand. In both, Germany as one of the world biggest consumers plays an important role. This study differentiates between two existing complementary marketing channels - honey which is directly sold from a beekeeper to the consumer and honey distributed via retail stores. This market segmentation leads to different price structures and price elasticities. The production structure of the apiary in Germany is characterized by 95 percent hobby-beekeepers, limited numbers of bee colonies and a small production volume. The study is based on interviews with experts and on the information collected for the beekeeping programs of the Federal Länder
