Resultados de Entrevistas a los Restantes Actores de la Cadena Cárnica Ovina

Abstract

Se realizaron 39 entrevistas a algunos actores relevantes de la cadena cárnica ovina: productores ganaderos, consignatarios y/o rematadores de ganado, transportistas de hacienda, industriales de la carne (frigoríficos), procesadores del cuero, distribuidores de productos cárnicos, operadores de mercado (brokers), carniceros, responsables de los supermercados y responsables de restaurantes y/o parrilladas. El objetivo fue conocer la percepción que tenían dichos agentes, previo a la evaluación en planta de la Fase II acerca de los problemas que podrían estar afectando la calidad del producto y la eficiencia de la cadena cárnica ovina, como así también los desafíos que enfrentan como empresarios que operan en la misma. No se pretendió realizar un estudio exhaustivo ni arribar a conclusiones definitivas sobre la problemática en torno a la calidad de la carne, sino precisamente obtener algún indicio acerca de la idea que tenían los agentes consultados sobre ese tema, aunque fuera totalmente subjetiva. Por este motivo, no se realizó ningún muestreo estadístico de las personas a entrevistar, ni se confirió rigor estadístico a los resultados.
