Impacto económico y ambiental de la quesería en el Valle de Tulancingo, Hidalgo (México)

    Abstract

    La industria quesera es un sector de gran importancia en el sistema alimentario mexicano, considerado estratégico por tres razones: primero, la leche y derivados son alimentos básicos que elevan la calidad de vida de la población que los consume; segundo, por los efectos de dicho sistema en el ingreso y empleo rural; y tercero, por su potencial para articular varios sectores productivos. La presente investigación consistió en analizar la rentabilidad de las empresas queseras y el impacto ambiental que se genera con esta actividad. Desde el punto de vista económico, la quesería del Valle de Tulancingo, Hidalgo resultó ser rentable, el indicador de rentabilidad obtenido resultó positivo, con relación al valor de activos invertidos en maquinaria y equipo, costo de la leche que procesan, costo de mano de obra y costo de servicios. A pesar del aporte de las queserías a la actividad económica de la región, la problemática generada por el lactosuero que es vertido al drenaje, es relevante al constituir una fuente potencial de enfermedades; por lo que, considerar alternativas como la elaboración de bebidas y la deshidratación, les permitiría a los queseros ser más rentables al obtener mayores ingresos, al mismo tiempo que reducen su impacto ambiental.
