The Quality Of The Raw Material For The Production Of "Rhum Agricole": The Case Of Martinique

Abstract

Les facteurs influençant la qualité des cannes livrées en unités industrielles sont fort nombreux, avec de complexes interactions. Dans le cas particulier du " Rhum Agricole Martinique ", un cahier des charges précise l'origine de la matière première, les conditions de culture et la qualité des jus. Toutefois, d'autres facteurs moins bien maîtrisés sont à même d'influer significativement sur les propriétés organoleptiques des rhums. Ainsi en est-il de certains composés mineurs, liés à des différences de flore microbienne ou de composition originelle de la canne, ouvrant la porte à différentes voies de recherche. Parallèlement, il est primordial d'optimiser la coordination entre planteurs et distillateurs, afin de réduire les délais entre coupe et broyage de la canne. La réalisation d'un produit d'Appellation d'Origine exige en effet que chacun s'imprègne d'un " Esprit Qualité ". Au-delà des normes à respecter, une philosophie participative de l'ensemble des acteurs est essentielle.
