Qualimetric Forecasting and Analysis of Consumer Requirements in Agricultural Markets

Abstract

We have proposed a new approach to the design of yogurt-based dairy desserts, which includes an analysis of consumer requirements and a qualimetric methodology. Within the study, we have used standard and generally accepted methods and tools of quality. The approach to product design that we have proposed includes the following types of work: (1) conducting sociological studies of consumer opinions; (2) determining weighting factors for consumer preferences; (3) developing a tree of quality and safety indicators; (4) setting values for product quality indicators that ensure high customer satisfaction; (5) developing recommendations for improving the quality of dairy desserts; and (6) establishing the regression equation and the response surface of the influence of pasteurization modes of the product and the mass fraction of structure-forming agents on the moisture-binding capacity of dairy desserts. We have also developed dairy dessert formulas based on yogurt. Studying the quality indicators has shown that consumers highly appreciate the sensorial properties of the dairy dessert prototypes we have developed.
