Branchenanalyse obst-, gemüse- und kartoffelverarbeitende Industrie: Entwicklung von Markt, Beschäftigung und Arbeitsbedingungen

Abstract

Mit mehr als 600 Betrieben und fast 26.000 sozialversicherungspflichtig Beschäftigten ist die obst-, gemüse- und kartoffelverarbeitende Industrie die sechstgrößte Branche der Nahrungs- und Genussmittelindustrie in Deutschland. Trotz einer derzeit guten konjunkturellen Entwicklung der Gesamtwirtschaft in Deutschland und einer insgesamt positiven Umsatzentwicklung im Bereich der Obst-, Gemüse- und Kartoffelverarbeitung - außer bei Fruchtsäften - sieht sich die Branche langfristig einer Reihe von Herausforderungen gegenübergestellt. Hierzu gehören z. B. sich wandelnde Konsummuster, der Preisdruck durch die große Marktmacht des Lebensmitteleinzelhandels und die Preisschwankungen auf den Rohstoffmärkten. Ziel der vorliegenden Studie ist es, diese Herausforderungen aufzuarbeiten und ihre Auswirkungen auf die Beschäftigungssituation sowie die Arbeitsbedingungen zu analysieren.
