Abstract

Das Ernährungsgewerbe hat sich schneller als die meisten Industriebranchen von den Schocks erholt, die durch die Einführung der Marktwirtschaft in Ostdeutschland ausgelöst worden sind. Umfangreiche Investitionen führten zum Ausbau und zur Modernisierung der Kapazitäten. Weitere angebotsfördernde Einflüsse und die relativ hohe Nachfrage aus der Einkommensentwicklung der privaten Haushalte bewirkten überdurchschnittliche Wachstumsraten bei Produktion und Absatz. Das Ernährungsgewerbe hat sich so zum produktions- und umsatzstärksten Industriezweig in den neuen Ländern entwickelt.
