Развитие Индустрии Общественного Питания В Сочи

Abstract

В статье рассматриваются реальное состояние и перспективы развития индустрии общественного питания в условиях подготовки к Олимпиаде 2014 года. Анализируется проблема качества обслуживания во всех сегментах ресторанной индустрии, проблема кадров и другие проблемы которые оставляют свой отпечаток на качестве обслуживания. Рассмотрена новая концепция развития индустрии общественного питания в Сочи, согласно которой индустрия должна развиваться в двух противоположных направлениях: в городе должны появиться рестораны премиального уровня и бистро с поточной линией. Акцент был сделан, в первую очередь, на франчайзинговую систему, и своими представителями сетевые линии видят именно представителей малого бизнеса.
