Abstract

[fre] Cet article étudie l'arbitrage entre les achats et l'autocon- sommation de légumes à partir de l'Enquête sur la Consommation Alimentaire 1991 de l'INSEE. Le modèle décrit la disponibilité d'un jardin, la consommation et l'autoconsom- mation de légumes. On utilise des procédures en deux étapes qui permettent de distinguer la décision de consommation de celle portant sur le montant consommé. Les résultats montrent l'indépendance entre la consommation de légumes et l'autoconsommation. On obtient en outre d'intéressants effets socio-démographiques qui peuvent être différents selon que l'on étudie la fréquence ou le montant autoconsommé. [eng] Household production and garden trade-off between home production and vegetables purchases . This paper studies the trade-off between vegetables purchases and home production with the 1991 French National Food Survey. We model the availability of a garden, and the total and home-produced vegetables consumptions. Estimation is obtained by using two-step procedures in which the decision to consume is distinct from the decision on the amount consumed. Results show the independence between total vegetables consumption and home-produced vegetables consumption. We obtain as well interesting socio-demo- graphic effects which can differ on the frequency and the volume of home-produced food consumption.
