Abstract

[fre] Le modèle de production du beaufort a été remis en cause par la concurrence. Pour faire face à une crise profonde d'identité à la fin des années 1950, les producteurs de beaufort s'organisent pour construire la qualité de leur produit. L'article se propose d'analyser comment s'est construit ce fromage de terroir de qualité, dont la notoriété est aujourd'hui reconnue. [eng] The construction of a local high-grade product : the beaufort cheese . Competition implicated the beaufort production model. For coping with deep identity's crisis at the end of fifty years, Beaufort cheese producers get organized and constructed the quality of their product. This paper shows, how this local cheese of quality, of which the notoriety is today acknowledged, has been constructing.
