Les biotechnologies dans l'industrie agro­alimentaire : champ d'application et impact économique

Abstract

[eng] After the presentation of the biotechnological fields and their economical stakes in food industry, we investigated the different steps of biotechnological processes. We specified the position of Food Companies at each level of the process in order to evaluation strengths and weaknesses of our industry and then to define future prospects for the biotechnologic's development. [fre] La difficulté cerner tous aspects activité en mutation permanente, nous a conduits, après avoir rappelé ce que sont les biotechnologies et les enjeux qu'elles représentent, à utiliser comme fil directeur de l'étude les différentes étapes d'un processus biotechnologique. Les positions occupées par les entreprises aux différents niveaux de ce processus nous ont permis de mieux apprécier les forces et les faiblesses de l'industrie et d'esquisser des perspectives de développement.
