Abstract

[eng] The structures of the French dairy industry has entered a phase of rapid reorganization in seven years, 1 705 dairy units (out of 6 000) have « disappeared ». . After appreciating the importance of this concentration, the authors have tried to analyse the technical' and economic factors which influence the growth of dairy firms. . The essential phenomenon is the growth of a small number of big firms. This' growth seems to take two main directions : . — control of the market of new products . — control of a high-consuming geographical area. [fre] Les structures de l'industrie laitière française sont entrées dans une phase de réorganisation rapide : en sept ans, 1.705 établissements laitiers (sur 6.000) ont « disparu ». . Après avoir mesuré : l'ampleur, de ce mouvement de concentration, les auteurs se sont efforcé d'analyser, les facteurs techniques et économiques, qui orientent la croissance des entreprises laitières.. Le phénomène essentiel réside dans la croissance d'un petit nombre de grandes firmes, croissance qui semble se faire selon deux directions principales : . — la conquête du marché de produits nouveaux . — le contrôle d'une aire géographique de grande consommation.
