Filière viande bovine : mutations, performances, financement

Abstract

[fre] Si l'ensemble de la Filière Viande Bovine (FVB) connaît, depuis environ deux décennies, de profondes évolutions, il faut noter que les plus importantes concernent le segment central où se déroulent abattage, transformation et commerce de gros des viandes. Après avoir situé ces mutations on cherche à analyser les modalités de leur financement. Il apparaît que les capitaux nécessaires ne proviennent ni des firmes du segment central de la filière, dont les capacités d'autofinancement sont faibles et l'endettement déjà élevé, ni des firmes des autres segments de la FVB ou d'investisseurs extérieurs, car les opportunités de valorisation du capital sont trop modestes actuellement. Ce sont les apports publics et para publics qui, concentrés sur un petit nombre de firmes, ont permis que s'amorcent les mutations précédemment décrites. [eng] In the last twenty years Beef Industry performs large evolutions, especially in slaughtering, (beef) processing and wholesale trading. After describing the changes, the author tries to analyse the financial aspects of the mutations. Who are the investors in this industry ? They are neither the concerned parties of business connected with them, nor other private investors. For the first ones, profits are too low to be ploughing back into the business. For the second ones, it is not a lucrative field. The French government and other public organizations have subsidized a few firms which initiated the mutations.
