Abstract

[eng] The milk processing industry a material of unequal quality and of seasonal availability. Market demand varies according to time and places. These characteristics which are those of almost every food processing industry do raise serious management problems to enterprises. In this article, we intend to show that if the substitution of best practice equipments for the existing ones nearly always leads to a reduction of employment, it does not necessarily increase productivity. When there is a indisproportion between demand and the unit capacity of the plants, with the utilization of best practice equipments with low-labour-intensity. [fre] L'industrie laitière transforme un matériau de qualité inégale et de disponibilité saisonnière dont la demande sur les marchés est variable dans le temps et dans l'espace. Ces caractéristiques qui sont d'ailleurs celles de presque toutes les industries agro-alimentaires posent aux entreprises de difficiles problèmes de gestion. Dans cet article, on se propose de montrer que si la substitution d'équipements plus performants aux installations existantes conduit presque toujours à une diminution de l'emploi, elle n'a pas nécessairement pour conséquence une augmentation de la productivité. Les gains de productivité associés à l'utilisation d'équipements performants où la main d'œuvre est peu nombreuse, ne sont pas assurés lorsqu'il y a inadéquation entre la demande et la capacité unitaire des installations.
