L'industrie française des viandes de volailles : les raisons de la faible rentabilité et de la tendance à la déconcentration dans le secteur

Abstract

[fre] C'est un ensemble de raisons interdépendantes (procédés d'abattage, contraintes de présentation et de conditionnement des produits, modes de distribution, habitudes de consommation) qui empêche le marché français du poulet d'évoluer vers une structure d'oligopole ou de concurrence monopolistique. On explique également dans cet article pourquoi la rentabilité de l'industrie d'abattage est abaissée par la concurrence entre les firmes et le type de capitaux qui entrent dans l'industrie. L'explication selon laquelle cette faible rentabilité est due à la réglementation des prix agricoles et alimentaires ne paraît pas plus valable dans ce secteur que dans les autres industries agricoles et alimentaires. [eng] This article shows that a large number of factors (relating to the production process from presentation to packaging, to the range of manufactured products, to marketing practises and consumption habits) prevent the French poultry market from being oligopolistic or having monopolistic competition. The poor economic profitability in the poultry slaughtering industry is also explained (competition between firms and type of capital entering the branch). The explanation according to which this situation is due to the regulation of farm and food prices does not seem more relevant for this branch than for other farm and food industries.
