Abstract

[fre] Résumé Les marchés alimentaires sont un maillon essentiel du réseau de distribution de la capitale. Par leur position et leur fonction, ils sont les lieux privilégiés d'observation de phénomènes qui touchent la société dans son ensemble. La police économique les surveille, enquête et tente de les réformer. La réglementation du commerce alimentaire partage les rôles et les fonctions des différentes formes commerciales ainsi que des agents. L'équipement de la ville en marchés transforme la relation des habitants au temps, à l'espace et à l'argent. Les marchés sont les sites d'émergence de groupes sociaux cohérents et participent à fabriquer concrètement le tissu urbain. [eng] Abstract The neighbourhood markets are an essential element of the Parisian food distribution network. They are a priviledged observation point for all types of societal phenomena. The economic police supervises, studies and tries out reforms. The rules regulating the food markets divide the roles and the functions of the different types of businesses and their proprietors. The progressive introduction of market places within the city transforms the relationship to time, to space and to money of the inhabitants. The marketplaces bear witness to the emergence of coherent social groups actively participating in the construction of an urban way of life.
