Évolution du cheptel bovin et production de viande

Abstract

[fre] La stagnation de la production de viande bovine, après la forte progression des dernières années, rend nécessaire une étude détaillée, afin de prévoir l'avenir. 1. Étude théorique des possibilités d'évolution du cheptel et des abattages : cheptel constant, cheptel croissant, changements dans le rythme d'évolution du cheptel (accroissement momentané des abattages, passage du cheptel constant au cheptel croissant, modification de la durée de service, orientation vers la production laitière ou la production de viande). 2. Étude de l'évolution depuis 1952 : contradictions entre statistiques de diverses sources ; certitude d'une forte progression des abattages, incertitude en ce qui concerne les effectifs de bétail. 3. Conclusion : risque de pénurie de viande bovine dans les prochaines années et nécessité d'une enquête pour lever cette incertitude.
