Durabilité d’un compromis territorial dans un contexte de pression compétitive accrue

Abstract

The Jura region remains until now characterized by an original production system. It is based on a local organization between farming sector and industry, and it allows capturing the rent linked to the leading local product – the Comté cheese. This system rests on a tacit agreement between numerous small cooperatives (the fruitières, which produce young cheese) and the ripening companies. However, this system is now threatened by the concentration movement of the cooperatives, which is driven by the search for a competitive advantage. This evolution began a few decades ago and continues by mergers. This paper highlights four essential factors of the restructuring movement: economical, technological spatial and sociological factors.
