Stature et malnutrition dans l’Alsace de la première moitié du XIXe siècle

Abstract

Cette étude croise les données anthropométriques et physiopathologiques de plus 53 000 conscrits alsaciens nés entre 1811 et 1850. Elle tient d’abord à mettre en lumière les apports que présente, pour la lecture diachronique de l’indice anthropométrique, la mobilisation des indices de malnutrition protéino-énergétique. Les concordances synchroniques entre la stature et le taux de malnutrition sont ensuite avérées par des calculs de corrélation : 58,5 % des disparités anthropométriques constatées entre communes tiennent à des inégalités d’ordre nutritionnel. Poussant plus loin l’analyse combinatoire de la taille et de la physiopathologie, une table d’anthropométrie nutritionnelle évalue l’impact centimétrique des maladies carentielles sur la croissance du conscrit.
