Abstract

O artigo explana sobre o uso da culinária cearense na atividade turística no Estado do Ceará-Brasil. O objetivo do artigo é identificar o contexto que leva a culinária cearense a figurar como atrativo para atividade turística no Ceará. Trata-se de um estudo exploratório com base na revisão da literatura que envolve as categorias de análise: gastronomia, culinária regional e turismo. Constata-se que a culinária cearense foi utilizada como elemento estratégico, a partir de esforços do governo cearense, no processo de consolidação do Estado como destino turístico e, aparentemente, necessita ser redescoberta, preservada e patrimonializada.
