Abstract

El turismo es un fenómeno dinámico y complejo que además de ventajas económicas genera beneficios sociales al permitir la interrelación entre culturas diferentes, logrando incluso en ocasiones revalorizar los recursos autóctonos de una región. De ahí que este trabajo pretenda contribuir al desarrollo de un turismo gastronómico sostenible en la provincia de Pastaza en el Ecuador, a través de la caracterización de los restaurantes de comida típica como atractivo turístico en la región. El estudio de campo permitió evaluar la oferta gastronómica de los restaurantes, determinar las principales expectativas de los visitantes, evaluar la infraestructura de las instalaciones y los factores determinantes en la prestación del servicio. Partiendo del análisis de la información recopilada fue posible identificar las debilidades, fortalezas, amenazas y oportunidades que inciden en la gestión de los restaurantes objeto de estudio, y a partir de ellas determinar las acciones a emprender a fin de posicionar los mismos a nivel nacional e internacional.
