Avances En La Microbiología De Alimentos

Abstract

El uso de microorganismos en la elaboración de alimentos se ha practicado desde las culturas más antiguas, aunque su función aún no era conocida por los fabricantes. Los microorganismos pueden ser los mejores aliados en la industria alimentaria, pero también pueden contribuir al deterioro de los alimentos y causar enfermedades. El presente trabajo recaba información relevante de la microbiología de alimentos publicada en los últimos cinco años. Se presentan sólo algunos de los avances más recientes en las áreas de análisis, control microbiano, procesos de desinfección, funciones de los microorganismos en la industria alimentaria y foodómica. Si bien, aún falta mucho por descubrir, puede afirmarse que, gracias al progreso de la microbiología de alimentos y las nuevas tecnologías, en la actualidad, es posible disfrutar de alimentos inocuos.
