El patrimonio gastronómico como alternativa de oferta turística en la Reserva de la Biosfera Sierra del Abra Tanchipa

Abstract

Este estudio forma parte de un proyecto que consiste en identificar alternativas de oferta turística viables en torno a la Reserva de la Biosfera Sierra del Abra Tanchipa. La presente investigación se enfocó principalmente en el patrimonio natural y cultural representado en la gastronomía local de manera que, además de agregar elementos para enriquecer la identidad cultural y como valoración de los recursos naturales que se poseen localmente, sea también parte del acervo patrimonial que permita a la población local aprovechar como una alternativa de aprovechamiento turístico. Para lograrlo, se analizaron ciertas especies de flora nativa de la Reserva de la Biosfera Sierra del Abra Tanchipa, las cuales sean aprovechadas localmente para la elaboración de platillos y que éstos conforman parte de una tradición en las familias de la zona de influencia de la Reserva. Actualmente el aprovechamiento turístico en la zona, a manera de turismo de naturaleza, es incipiente y las comunidades rurales se interesan en incrementar las opciones de oferta turística que permitan incrementar las fuentes de ingreso. De esa manera, aprovechar la creciente afluencia turística que año con año se registra en la región de la Huasteca Potosina. Los resultados que se presentan en este artículo corresponden a la localidad La Aguaje, ubicada en la zona de influencia de la Reserva de la Biosfera Sierra del Abra Tanchipa.
